Pineapple Chicken Fried Rice
This is a very easy and healthy full balanced dish for dinner or lunch

INGREDIENTS
Boneless chicken breast: 6oz
Garlic: 3 cloves
Frozen Mixed Vegetables ( carrots, corn, green beans, green peas etc): 1 cup
Eggs: 3 large
Salt: ½ tsp or according to your taste
Pepper powder: 1tsp
Paprika Powder: ½ tsp
Soy Sauce: 1tbsp
Sweet Chili Sauce: 1-2 tbsp
Diced Pineapple: 1 cup ( fresh or canned)
Diced Onions: ½ cups
White Rice cooked (any of your favorite kind): 3 cups
Canola Oil: 3 tbsps
DIRECTIONS

Gather all the ingredients.

Cut the chicken into small pieces and marinate with a pinch of salt and paprika powder and keep aside

Take 3 cups of left over rice

Defrost the frozen vegetables (you can take fresh vegetables also)

Chop garlic

Dice pineapple (you can take canned or fresh)

Dice Onion (any of your favorite onion)

Beat the eggs with a fork and keep aside
-

Now, Heat a pan on high flame and add one tsp of oil and cook the egg on medium flame with a pinch of salt. Break into desired pcs and keep aside.

In that same pan add the rest of the oil and add chopped garlic and chopped onion and cook for 1 min on high flame.

Once it becomes translucent, add the diced chicken and cook for 3 mins on medium flame.

Add the mixed vegetables and mix well for a minute on a medium flame.

Add 1 tsp of pepper powder and mix well
-
Add the diced pineapple and mix well for another 1 min on a medium flame.

Once all the above mixture mixed and cooked well add the leftover cooked rice and mix well for another 2 mins on a medium flame.

Add the sweet chili sauce and soy sauce . Check the salt. If you think your recipe needs more, then add a pinch of salt.

Finally, mix it well, cook on high flame for 1-2 minutes.

For the entire process stir continuously to get the desired taste.
