INGREDIENTS

whole red lentils: 1 cup
chopped carrots: 1 cup
diced celery, raw: 1 cup
chopped onion(red/yellow): ½ cup
chopped green Onion: ½ cup
fresh spinach & cilantro: 1 cup
cloves of chopped garlic: 3 pcs
cumin seed: 1 tsp
any cooking oil or butter: 1-2 tbspn.
salt or as per taste: 1 tsp

DIRECTIONS

1)Take out your instant pot and set it to sauté mode 7-10 mins
2)Once the pot is hot, add butter or oil
3) Once the oil is hot add cumin seed and cook until brown
4) Add chopped garlic and cook for one min
5) Add chopped onion and cook until is soft and translucent
6) Add salt and mix well
7) Add chopped green onion
8)Add chopped carrot & celery and sauté for 2 mins
8) Add the raw lentil and mix it well
9)Add 4 cups of water and mix properly. Adjust the salt and cover the lid
10) Seal it and change the setting to soup mode, high pressure for 10 min
11) Once it done let it set for 5 mins then release the pressure
12)Open the lid then add the chopped spinach and cilantro and mix it well.
13) Serve hot and enjoy the healthy soup with your choice of bread
