Coconut oil has ~90% saturated oil, which is difficult to digest and can cause heart disease, compared to olive oil (~15%) and butter (~50%). Coconut oil is high in calories (168 cal/tbsp.) compared to butter (102 cal/tbsp.). Other known beneficial ingredients such as antioxidant, omega-3, green chlorophyll are also absent in coco-oil! So, coco-oil craze is based on myth or fact? We definitely need more scientific evidences!

Homemade Mexican Chicken Rice Bowl

Healthy fresh Mexican chicken rice bowl for lunch and dinner



Minutes to Prepare: 20

Minutes to Cook: 60

Number of Servings: 4-6



Boneless/Skinless Chicken Breasts: 6-10oz
White Rice (jasmine/long grain): 1 cup
Green Bell Pepper: ½ cup
Yellow Bell Pepper: ½ cup
Red bell pepper: ½ cup
Onion: 1 large
Taco Seasoning: 3 tsps
Canola Oil: 3 tbsps

Tomato Paste:1 tbsps
Garlic: 8 cloves
Jalapeno Peppers (optional): 2 small
Knorr Caldo de Pollo: 1cube
Chipotle Chili Powder(optional): 1tsp

Lemon Juice: 2 tbsps

Yellow Sweet Corn: 1 can
Black Beans: 1 can
Salt as per taste
Chopped Cilantro: 1 cup for garnishing
Shredded cheese (any of your fav kind) for garnishing
Sour cream for garnishing

Salsa (fresh or store bought) for garnishing

Guacamole (fresh or store-bought) for garnishing





For Mexican Rice

Garlic: 5 cloves
Onion: ½ cup
Oil: 1 tbsp
Rice: 1 cup
Tomato paste: 1 tbsp
Taco seasoning: 1 tsp
Knorr Chicken bouillon: 1 cube
Water: 2 cups

1. Make a fine paste of garlic and onion

2. Heat a pan add 1 tbsp of oil and add the paste and saute for 2 mins on medium flame

3. Add one cup rice and saute well for 2-3 mins on medium flame

4. Add tomato paste and mix well with the rice for 1-2 mins on medium flame

5. Add taco seasoning and knorr chicken bouillon cube. Mix well with the rice and add two cups of water.

6. Check salt at the end and add salt if needed as per your taste

You can cook the rice in the stove but we cook the rice in the microwave. We transfer the rice in a microwave-safe bowl and let it cook for 17 mins. You can check the rice in between and, if needed you can add little more water and cook for another 2-3 mins. Keep it aside.

For Mexican Chicken

Cut Boneless/Skinless Chicken (6-10 ozs) into thin slices
Cut Bell peppers (red, green and yellow) into strips
Cut the rest of the onion into slices
Chop the rest of the garlic
Chop Jalapeno(optional)
Oil:1 tbsp
Salt as per taste
Chipotle chili powder:1 tsp
Taco seasoning: 1 tsp
Lemon/Lime juice:1 tbsp

1.  Heat a pan and add 1 tbsp of oil
2. Add chopped garlic and onion and saute for 1 min on medium flame
3. Add the chicken slices and saute well for 4-5 mins on high flame. Stir continuously.
4. Add salt per taste, chipotle chili powder, and taco seasoning. Mix well for 2-3 mins on medium flame.

5. Add jalapeno(optional)
6. Add the bell peppers and mix well with chicken for another 4-5 mins on medium flame.
7. Add lime or lemon juice at the end. Mix well and keep aside

For Mexican Corn and Bean


Corn: 1 can (rinse it well with water)
Black Bean: 1 can (rinse it well with water)
Salt as per taste
Oil: 1tbsp
Taco seasoning:1 tsp
Lemon/lime Juice:1 tbsp

1. Heat a pan and add oil

2. Add the corn and beans. Then add salt as per taste, taco seasoning, and lime/lemon juice.

3. Mix well on medium flame for 1-2 mins


NOW Let’s assemble the bowl


 Fresh Guacamole or store-bought

 Fresh salsa or store-bought
 Fresh Cream
 Shredded Cheese of your choice
 Chopped Cilantro
 Lime or lemon slices(optional)

Take a Bowl, add rice, spread some chicken, then add the corn and beans, add salsa, add Cheese, and on the side put guacamole, fresh cream, and lime/lemon slice ( or you can assemble the bowl as per your choice)

Pork Belly with Chinese Mustard

  • You can add your favorite nuts

  • If you are a garlic lover, add more garlic to the dressing

  • Add lemon juice and salt as per taste

  • You can use paprika in place of cayenne pepper. If you don't have white pepper, use black pepper.

Try this fresh Sautéed chicken salad at home with lemon cilantro dressing. you will definitely like this salad.

Minutes to Cook: 10 – 12

Number of Servings: 4



Julienned 1/2 Iceberg Lettuce:  2 cup
Julienned carrot, 1 medium size: 1 cup
Julienned pickle cucumber, with peel: 1 cup
Julienned  spinach, fresh: 1 cup
Julienned  roma tomato: 1 medium
Julienned  strawberries, fresh: 2 medium
Thinly sliced boneless skinless chicken, thigh/breast: 12 oz
Sliced red/yellow onion: 1 medium
Finely chopped garlic: 3 cloves
Chopped Cilantro: 20 gm
Black pepper: 1tsp
White pepper: 1tsp
Salt: 1 tsp
Olive Oil: 2 tbsps
Lemon juice, 1/2 of lemon: 2 tbsps
Pecans, toasted or raw: 1 oz

Cayenne pepper/ paprika: 1 tsp

Canola Oil/butter: 1 tbsp 



For the salad

Julienne iceberg lettuce, carrot, cucumber, spinach, tomatoes, and strawberries

  1. Shred the chicken thigh/breast

  2. Finely slice the onion


For the Dressings


  1. Finely chop garlic

  2. Chop cilantro


Now heat a pan and add oil/butter


  1. Add sliced onion and saute for a minute

  2. Then add the shredded chicken, mix it well, then add 1/2 tsp of salt or as per your taste, add 1 tsp of cayenne pepper/paprika and 1 tsp of white/black pepper powder.

  3. Mix the chicken well and saute on a medium flame for 7 - 10 mins until it cooked 

  4. Remove it from the pan when it is done

  5. Now, prepare the dressing:

  6. Take a bowl, add chopped garlic and chopped cilantro, add 1/2 tsp of salt and black pepper powder, add olive oil and lemon juice

  7. (You can also add 1 tsp of honey/brown sugar)

  8. Mix it well and your dressing is ready

  9. Assemble the salad

  10. Take a big bowl, add all the vegetables, cooked chicken, add the dressing and sprinkle with some pecans on top.

  11. Mix well and enjoy the fresh chicken salad with your favorite wine.


  • You can add more vegetables of your choice.

  • Adding more garlic gives you more flavor and this

  • soup is very high in protein and fiber.

Minutes to Prepare: 5

Minutes to Cook: 20

Number of Servings: 4



whole red lentils: 1 cup
chopped carrots: 1 cup
diced celery, raw: 1 cup
chopped onion(red/yellow): ½ cup
chopped green Onion: ½ cup
fresh spinach & cilantro: 1 cup
cloves of chopped garlic: 3 pcs
cumin seed: 1 tsp
any cooking oil or butter: 1-2 tbspn.
salt or as per taste: 1 tsp


  1. Take out your instant pot and set it to sauté mode 7-10 mins

  2. Once the pot is hot, add butter or oil

  3. Once the oil is hot add cumin seed and cook until brown

  4. Add chopped garlic and cook for one min

  5. Add chopped onion and cook until is soft and translucent

  6. Add salt and mix well

  7. Add chopped green onion

  8. Add chopped carrot & celery and sauté for 2 mins

  9. Add the raw lentil and mix it well

  10. Add 4 cups of water and mix properly. Adjust the salt and cover the lid

  11. Seal it and change the setting to soup mode, high pressure for 10 min

  12. Once it done let it set for 5 mins then release the pressure

  13. Open the lid then add the chopped spinach and cilantro and mix it well.

  14. Serve hot and enjoy the healthy soup with your choice of bread
